Hojicha tastes warm, toasty, nutty and slightly caramel-like because the leaves or stems are roasted at high heat, reducing bitterness and caffeine.

When shopping online, firstly look for matcha that clearly lists a specific Japanese growing region (such as Yame), not just “Product of Japan.”  

Colour: Premium matcha has a vibrant, bright emerald green, indicative of careful shade-growing process. Avoid products that appear dull, yellowish, or olive green, as this signals lower quality, older stock or improper processing/storage. 

Aroma & Taste: Quality matcha has a fresh, grassy aroma with natural sweetness and a rich umami flavour. Strong bitterness, harshness or musty notes are signs of poor quality.  

Price: High-quality ceremonial matcha is a labour-intensive product, so the price will reflect this. Be wary of very inexpensive options, as they are likely lower-grade or blended with fillers. Expect to pay a premium price, typically between $30 and $65AUD for 30-40g. 

Packaging: Matcha is sensitive to light, air and moisture. Premium products are always sold in opaque, airtight containers, like tins or vacuum-sealed foil pouches to maintain ultimate freshness. Avoid transparent packaging. 

Ceremonial matcha and culinary matcha mainly differ in quality, colour and intended purpose.  

Ceremonial grade matcha is the highest quality, think bright green, naturally sweet and rich in umami - designed to be enjoyed on its own.

Culinary grade has a stronger, more earthy and slightly bitter flavour, making it ideal for lattes, smoothies and baking where it blends better with other ingredients.  

• Quality: Lower grade which uses slightly older leaves or later harvests  
• Colour: Less vibrant, can be duller or yellowish green 
• Flavour: More bitter/earthy (less theanine) 
• Use: Baking, cooking, smoothies, dessert-style cafe matcha lattes, and other recipes where its flavour needs to stand out  

In short, ceremonial is best for sipping, while culinary is made for cooking and mixing.

🧊 Iced matcha lattes typically use around 4-5g of matcha, with extra milk and ice for a smoother, more refreshing finish.

🍬 Sweetness preference: Of course, added sweetness is optional ;) Sweeten to taste using your choice of sweetener (such as sugar, honey, fruit or flavoured syrup) to complement the natural flavour of your matcha.
